Mr. Pumpkin’s banquet serves up some of our favorite fall foods, and to get excited for the upcoming autumn season, we decided to make Lord Wolfington’s cranberry orange scones ourselves, and they did not disappoint!

Lord Wolfington’s Cranberry Orange Scones

What You’ll Need

Supplies

  • 1 large mixing bowl

  • Measuring cups and measuring spoons

  • 1 Whisk

  • 1 standard size cookie sheet

  • Parchment paper

  • Cookie cutter

Ingredients:

  • 2 cups all-purpose flour

  • 1/3 cup granulated sugar

  • 2 tablespoons orange zest

  • 1 1/2 teaspoons baking powder

  • 1/2 teaspoon kosher salt

  • 1/2 cup unsalted butter, cold, shredded using a cheese grater

  • 1/2 cup heavy whipping cream, cold

  • 1/2 cup dried cranberries

  • 2 teaspoons sanding or other coarse sugar (optional)

  • 1 cup powdered sugar

  • 1/4 cup orange juice, strained

Making the scones

1. Preheat the oven to 375 degrees Fahrenheit.

2. In a large bowl, place the flour, sugar, baking powder, salt, and orange zest.

Mix with a whisk until well combined.

3. Add the cold, shredded butter to the mixture.

4. Mix using your hands until it resembles coarse crumbs (pea-sized chunks are good).

5. Pour in the cold heavy whipping cream.

6. Fold it into the dry mixture, starting with a whisk or other stirring utensil, and then use your hands as the dough starts to come together.

  • Here’s a tip: Add cold water by the tablespoon if it’s too dry!

7. Add the dried cranberries, making sure to not overwork the dough too much.

8. On a lightly floured surface, bring the dough together a little more and then shape it into a large disk, roughly 1 ½ inches thick.

  • Here’s a tip: Again, try not to overwork the dough! This results in a tougher, less-flaky scone texture.

9. Cut out scones using a circular cookie cutter.

10. Place the scones onto a baking sheet lined with parchment, sprinkle with sanding sugar (the sugar is optional, but adds a nice texture to the top!).

11. Bake in the oven for 20-25 minutes, or until slightly golden brown on the top and bottom.

12. Let the scones cool to room temperature while you make the glaze.

13. For the glaze: Whisk together the powdered sugar and orange juice in a large bowl.

  • Here’s a tip: For a smoother consistency, sift the powdered sugar into the bowl first before mixing with the orange juice!

14. Drizzle the glaze over the scones in whatever way you’d like and enjoy!
